This is a very simple vegan cutlet/patties recipie.
Ingredients:
- 2 Large Zucchini, 3 tbsp Rice Flour
- 1/2 tsp each: black pepper, coriander power (kişniş), sumac, chilli flakes (pul biber) Optional/Alternatives: garlic powder, curry powder, garam masala, oregano
- Salt to taste
- 1 tbsp Lemon juice
- Oil for shallow frying
Method
STEP1: Coarsely
shred courgettes and squeeze out all excess water.
Ingredients:
- 2 Large Zucchini
- 3 tbsp Rice Flour
- 1/4 tsp Black Pepper
- 1/4 tsp Oregano
- 1/2 tsp Garlic powder
- 1/4 tsp Basil leaves
- 1/4 tsp Chilli flakes
- Salt to taste
- 1 tbsp Lemon juice
- Oil for shallow frying
Method
- Shred zucchini using grater.
- Squeeze out all excess water from the shredded zucchini.
- Now sprinkle some rice flour over zucchini shreds.
- Season the mixture with black pepper, garlic powder.
- Then add oregano, basil leaves, chilli flakes.
- Finally add salt and lemon juice.
- Gently mix the mixture using fork.
- Now grease the pan well with some oil.
- Pour a spoonful of zucchini mixture in pan giving it a round patty shape.
- Shallow fry till it gets deep golden color from all the sides.
- Serve hot with coriander or mint chutney!

STEP 2: Now
sprinkle the rice flour over zucchini shreds. This will help in binding
and will give extra chirp to your patties. Season the mixture with black pepper,
coriander power (kişniş), sumac, and chilli flakes (pul biber). Also,
add salt and lemon juice.
STEP 3: Mix gently until it all comes together.
STEP 4: Grease the pan well with some oil. Pour a spoonful of zucchini mixture in pan giving it a round shape.
STEP 5: Shallow fry till it gets deep golden colour from both the sides. Serve hot with mint chutney and yogurt.
Tip: These patties can be used for vegan burgers as well.
